Produced by JASAL, this coffee reflects a prize-fighter mindset, with exceptional care taken in picking and processing - even the sacks are hand-painted.
The Pacamara variety, a Salvadoran cross of Pacas and Maragogype, comes primarily from El Molino, with a small contribution from Finca San Francisco.
Cherries are processed at Beneficio Los Cruces using a natural anaerobic fermentation, followed by two clean-water soaks to enhance clarity, depth, and body.
